Andrew Sharp is the public face of a co-operative of small farmers, in Cumbria, in the English Lake District. They produce Herdwick sheep and Galloway cattle, primitive breeds that are naturally reared to produce the finest meat. Meat from these breeds is of unsurpassed quality, with tight-grained texture and marvellous depth of flavour. Meat from more ordinary grain-fed modern breeds, standardised, homogenised, mass- produced, and pre-packaged in great volume can never provide the level of quality and flavour achieved by traditional Cumbrian methods of farming and grass feeding. Andrew’s family and ancestors have been in the beef and sheep business, in the Northwest of England, for more than 400 years. As a master butcher, he selects the best animals and assures that they are handled, hung and matured properly.
